MEDIEVAL STEEL - s/t (even though it's a bit short at 5:34, the style and lyrics just reek of valour, struggle and victory)
THE GATES OF SLUMBER - God Wills It (a 20+ minute song about the crusades? It doesn't get more epic than this)
WHILE HEAVEN WEPT - Thus, With A Kiss, I Die (melancholy (and epicness) deluxe)

La Villa Strangiato is amazing. One of the most evocative songs with no vocals for me. The middle part with the ghost notes... ooooh. The whole of progressive metal starts there for inspiration. It's also the song I started to learn on the guitar when I wasn't very good at all and I sorta learned to play the guitar just to do this song.
